Hardy Kiwi Pie
Makes One Pie | Hands-On Time: 15m | Total Time: 30m
Ingredients
1 - Baked 9" pie crust
1 - 10 oz can of sweetened condensed milk
1 tablespoon of lime zest
1/2 cup of pureed kiwis
1/4 teaspoon salt
2 slightly beaten egg yolks
1/4 teaspoon green food coloring (optional)
Directions
1.) Preheat oven to 350 degrees F.
2.) Combine all ingredients (except pie crust). Pour mixture into pie shell.
3.) Bake the pie for 15 minutes.
Hardy Kiwi Jam
Yields about 6 half-pints | Hands-On Time: 15m | Total Time: 30m
Ingredients
6 cups hardy kiwi, quartered with skin on
2 package dry pectin (like Sure-Jell)
2 cup unsweetened pineapple juice
2 cups sugar
Directions
1.) Combine kiwi, powdered pectin and pineapple juice in a large saucepan. Bring to a boil, stirring constantly.
2.) Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard 1 minute, stirring constantly.
3.) Remove from heat. Skim foam if necessary.
4.) Ladle hot jam into hot jars, leaving 1/4" headspace. Adjust two piece caps. Process 10 minutes boiling water bath.
Guaca-Kiwi
Makes 2 cups | Hands-On Time: 15m | Total Time: 15m
Ingredients
1 ½ cups hardy kiwi, diced
2 Tbs lime juice
2 tsp brown sugar, packed
½ tsp dried oregano
1 avocado, diced
Directions
1.) Mix together all ingredients.
2.) Serve with tortilla chips. Keeps for several days.
Hardy Kiwi Daquiris
Makes 2 cups | Hands-On Time: 10m | Total Time: 10m
Ingredients
8-10 hardy kiwi (to taste)
1 cup pineapple juice
3 oz white rum
8 ice cubes

1.) Mix in a blender and enjoy!
